“Scucchiato Chicken is a whole chicken cut into several small parts, seasoned with salt and herbs and cooked in a wood oven.
The secret to cooking a good Scucchiato Chicken is the heat of the oven.
The high temperatures of the oven, in fact, operate on the pores of the chicken meat, which shrink, obtaining two beneficial effects for the flow rate:
– the skin of the peeled chicken becomes crunchy, giving an excellent flavor to the dish;
– the meat of the seared chicken, thanks to the protective effect of the skin, cooks preserving its natural hydration without drying out, as often happens in the rotisserie.”
The variations are many so as to be able to satisfy the most diverse palates:
– potatoes and porcini mushrooms;
– potatoes and onions;
– to the Cacciatora;
– with Curry;
– with potatoes and pineapple.
